How to preserver pears/apples
 
I'm going to a farm to pick up a load of apples and pears. What are some tips for preserving them?

Is there a way to can them without cooking the nutrients out of them ? (i.e. boiling them to death). Or what is the bare minimum for canning them if I do have to cook them

Also, how do supermarkets store apples for almost a whole year from one Fall harvest to the next? Is there something more to some ideal temperature, like some gases they add or maybe some ventilation system to remove the ethylene gas the apples release?

DID 7 QUARTS AND ALL WENT WELL. I THINK WE'LL MAKE A PIE TONIGHT!!

With Apples I usually prefer to make apple sauce out of the apples. Make sure to use different types of apples as to get the right combo of tart and sweet flavors. nothin better than home made apples sauce and without all the crap that the store bought stuff has.

Hey that's pretty funny, the one for apples was posted as a reply to one of my own threads! I guess I stopped paying attention to that thread once I got the lids problem figured out!

Mmm.. pie filling is a great idea. I will do that. I wonder if that can be extended to pears too... Pear Pie filling? Worth a try ...

Let's not forget drying. Dried apples (snitz) are a great snack food as long as you don't eat too many at once. Pears can be dried as well but I never cared for them as much.

better to just can slices in light syrup with a little lemon juice than drying them, unless you plan to eat them as snacks. 2 quarts seems to do well for a pie or crisp.
